Founded by Matt Higgins and Keith Gehrke, veteran baristas and coffee bean roasters, Coava Coffee Roasters in Portland, Oregon, focuses on single origin, small-batch-roasted drip coffee. The interior is appropriately temple-like, with a hushed, industrial vibe (repurposed drill presses and bench saws serve as tables).
